- 1 bunch enoki mushrooms
- Cherry tomatoes on the vine
- 1/2 avocado
- 1 egg
- 2oz smoked salmon
Lion's Mane Vinaigrette:
- 2T olive oil
- 1T balsamic vinegar
- 1 tsp dijon mustard
- 1 packet Lion's Mane
- Sea salt and pepper, to taste
