Cordyceps Beet Hummus
2 roasted beets
1T fresh lemon juice
1c chickpeas, rinsed
2/3c tahini
2 cloves garlic
Sea salt & pepper, to taste
1/3c olive oil
2 packets Four Sigmatic Cordyceps
Put all ingredients except for olive oil and tahini in blender. Blend until smooth, then slowly add olive oil while blending on low. Remove mixture from blender and whisk in tahini.
