Grain-free Strawberries n Cream Cookies

OKAYYY these cookies though! They're adapted from my cashew butter crack cookies and are absolutely addicting. (No, there's no crack in there, but if you told me there was, I'd believe you). 


3/4c cashew butter
1T ghee or butter
1/4c brown sugar (coconut sugar works too! You healthy betches)
1 egg
1 tsp vanilla
2T coconut flour
1/2 tsp baking soda
Pinch salt
1/2 cup freeze-dried strawberries (must be freeze-dried! Fresh strawberries will have too high of water content). 
1 bar high-quality white chocolate, chopped 


Preheat oven to 350. Mix cashew butter, ghee and sugar in a large bowl. Add in egg and vanilla and mix again until combined. Add the coconut flour, baking soda, & salt. Dough will be thiqqq and oily. Add in chopped white chocolate and freeze-dried strawberries. Using a tablespoon, scoop dough onto baking sheet. Bake for 6-8 minutes at 350. Careful not to over-bake or cookies will dry out! Allow cookies to cool on baking sheet for 5 minutes before transferring to wire rack to cool completely. INHALE.
