No-bake Breakfast Cookies (gluten-free, vegan, no refined sugar)

Cookies for breakfast?! Uh huh, honey. What if I told you these had no refined sugar (!) were gluten-free (!) and vegan (!!!) Are you screaming? I'm screaming.
Here's what you need:
  • 1/4 cup granola butter or nut butter
  • 1/4 cup oats
  • 1 tbsp maple syrup (optional)
  • 1 tsp vanilla
  • pinch salt

Mix all ingredients together and roll into balls, then flatten to "cookies." Store in fridge for up to a week!
