Pumpkin Cookie Dough Bites

For everyone (like me) who eats half the bowl of cookie dough before getting anything into the oven... here’s something that’s MEANT to be eaten raw. Cheating and snitching is FULLY allowed. If you’re with me, then you’ve got to try these pumpkin cookie dough bites made with granola butter!

Made with simple, flavorful ingredients, this recipe only uses one bowl! (Thank goodness). Your hands will be a mess after this one, but a least your kitchen doesn’t have to be ;)


1 cup almond flour

1/2 cup pumpkin purée

1/3 cup granola butter

1 tsp vanilla

4 T maple syrup

1 tsp cinnamon

2 tsp pumpkin spice

pinch salt

1/2 cup dark chocolate chips

Mix up everything in a bowl, and add the chocolate chips last. Refrigerate for a bit for easier handling. Roll that dough into balls (any gosh darn size you like!) and place them on a cookie sheet with lightly oiled parchment paper. Eat them right there, right now! Or, save them for later in the fridge or freezer. Try mashing them into vanilla ice cream for a crazy good dessert.
