Raw Matcha Cacao Bars
Crust:
- 1c soaked raw cashews
- 1/2c maple syrup
- 1/4c almond flour
- 1/4c cacao powder
- 1 tsp vanilla extract
Cacao Layer:
- 1c soaked raw cashews
- 1/2c maple syrup
- 1/4c coconut oil, melted
- 1/4c raw cacao powder
Matcha Layer:
- 1c soaked raw cashews
- 1/2c maple syrup
- 1/4c coconut oil, melted
- 1/4c Mushroom Matcha powder
For crust: Drain raw cashews and put in high-speed blender with maple syrup and vanilla extract. Blend until smooth. Slowly add almond flour and cacao powder in small increments until smooth. Pour mixture into 8x8 baking dish lined with parchment paper. Freeze for 1 hour.
For cacao layer: Drain raw cashews and put in high-speed blender with maple syrup and vanilla extract. Blend until smooth. Add melted coconut oil. Pour mixture over crust, then freeze for 1 hour.
For matcha layer: Drain raw cashews and put in high-speed blender with maple syrup and vanilla extract. Blend until smooth. Add melted coconut oil and matcha. Pour mixture over crust, then freeze entire dish for 3 hours. Remove from freezer and cut into squares.
