4-Ingredient Crunch Bars (Gluten-Free, Vegan, Refined Sugar-Free)

Here's what you'll need:

๐ŸคŽ 1 1/2 cups puffed rice

๐ŸคŽ 1 cup Vanilla Granola Butter

๐ŸคŽ โ…“ cup maple syrup

๐ŸคŽ 1 cup chocolate chips

๐ŸคŽ 1/2 tbsp coconut oil


Here's what you'll do:

๐ŸคŽ Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

๐ŸคŽ In a large bowl, combine the puffed rice, Vanilla Granola Butter, and maple syrup. Stir well until all the puffed rice is evenly coated with the GB and maple syrup mixture.

๐ŸคŽ Pour the mixture into the prepared baking pan. Using a spatula or your hands, press the mixture down firmly into an even layer, ensuring itโ€™s packed tightly to help the bars hold together.

๐ŸคŽ In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second increments, stirring between each, until the chocolate is completely melted and smooth.

๐ŸคŽ Pour the melted chocolate over the puffed rice mixture in the pan and spread it evenly over the top with a spatula. Place the pan in the refrigerator for about 1 hour, or until the chocolate is set and the bars are firm.

๐ŸคŽ Once the bars are set, use the parchment paper overhang to lift them out of the pan. Place them on a cutting board and cut them into bars. Store the crunch bars in an airtight container in the refrigerator for up to a week.
