Air Frier Lemon Blueberry Fritters (Vegan Option) 🍋🫐
Lemon + blueberry is the combo of the summer, there I said it!! Imagine bringing this on a park picnic or to Sunday brunch with the girls 🥲🥲
Here's what you'll need:
💛 1 cup all-purpose flour, plus more if needed
💛 1 cup greek yogurt (could sub coconut yogurt!)
💛 1 ¼ tsp baking soda
💛 1 tsp vanilla extract
💛 1 tsp lemon juice
💛 ½ cup blueberries, fresh or frozen
💛 1 tbsp lemon zest
💛 ¼ cup granulated sugar, for coating
For the Granola Butter® glaze:
💛 ¼ cup Vanilla Granola Butter®
💛 ½ cup powdered sugar
💛 2-3 tbsp milk (could sub oat/almond milk!)
Here's what you'll do:
💙 Preheat air fryer to 375F.
💙 In a medium bowl, combine the flour, yogurt, baking soda, vanilla extract, and lemon juice. Mix until a sticky dough forms (if the dough is too wet to handle, add 2-3 tbsp more flour).
💙 Then, add in the blueberries and lemon zest, and mix until evenly distributed throughout the dough.
💙 Put the granulated sugar into a small bowl. Line the basket of the air fryer with a piece of parchment paper.
💙 Using a large spoon, scoop the dough out (about 2 tbsp per ball), and place the ball of dough directly into the granulated sugar. Roll the ball around in the granulated sugar, making sure to completely cover the surface (the dough might be a little sticky, but that’s okay - you can use a spoon to help roll it around if it is sticking to your hands too much). Once coated, place directly into the air fryer basket. Repeat until the dough is gone.
💙 Air fry for 7-9 minutes or until golden brown.
💙 While they are in the air fryer, mix together the ingredients for the Granola Butter® glaze in a medium bowl.
💙 Once done, remove from the air fryer and drizzle the glaze on top.
