Amaretti GB Sandwich Cookies (Gluten-Free & Dairy-Free)
There is just something about a sandwich cookie that instantly makes it 10x more appealing ๐ And these ones screammm holiday in all the best ways. Best of all, they're gluten-free & dairy-free for all our allergy hunnies!

Here's what you'll need:
๐ 5 egg whites
๐ Pinch of salt
๐ 5 cups almond flour
๐ 1 ยฝ cups granulated sugar
๐ ยฝ tsp vanilla extract
๐ 2 tsp almond extract
๐ ยฝ cup granulated sugar
๐ ยฝ cup powdered sugar
๐ ยฝ cup Original Granola Butterยฎ (Sugar Cookie would also be incredible in this recipe!!)

Here's what you'll do:
๐ Preheat oven to 325F. Line a baking sheet with parchment paper; set aside.
๐ Beat the egg whites and salt together until stiff peaks form. Set aside.
๐ Sift the almond flour and 1 ยฝ cups of granulated sugar into a bowl.
๐ Add about โ  of the almond flour mixture to the egg whites, and use a spatula to gently fold it in.
๐ Then, add in the vanilla extract and almond extract, quickly fold them in.
๐ Add another โ  cup of the almond flour mixture to the egg whites and fold it in again.
๐ Then add the remaining almond flour mixture and fold it in one last time (the cookie dough should be like a thick paste).
๐ Scoop out mounds of the cookie dough and place them onto a plate with granulated sugar. Roll the scoops of cookie dough in the sugar, then use your hands to roll and round them into balls.
๐ Drop the balls into a bowl of powdered sugar to completely and evenly coat them.
๐ย Place on the prepared baking sheet, and use your hand to lightly press each cookie.
๐ย Bake for 20-25 minutes.
๐ย Remove and let cool on a wire cooling rack.
๐ย Then, take half of the cookies, and spread ~1 tsp of the Granola Butterยฎ on them. Then take the remaining cookies, and place them on top of the ones with GB to create cookie sandwichesย ๐คค๐คคย Enjoy!
