Amaretti GB Sandwich Cookies (Gluten-Free & Dairy-Free)

There is just something about a sandwich cookie that instantly makes it 10x more appealing ๐Ÿ˜‚ And these ones screammm holiday in all the best ways. Best of all, they're gluten-free & dairy-free for all our allergy hunnies!

Here's what you'll need:

๐ŸŽ„ 5 egg whites

๐ŸŽ„ Pinch of salt

๐ŸŽ„ 5 cups almond flour

๐ŸŽ„ 1 ยฝ cups granulated sugar

๐ŸŽ„ ยฝ tsp vanilla extract

๐ŸŽ„ 2 tsp almond extract

๐ŸŽ„ ยฝ cup granulated sugar

๐ŸŽ„ ยฝ cup powdered sugar

๐ŸŽ„ ยฝ cup Original Granola Butterยฎ (Sugar Cookie would also be incredible in this recipe!!)


Here's what you'll do:

๐ŸŽ„ Preheat oven to 325F. Line a baking sheet with parchment paper; set aside.

๐ŸŽ„ Beat the egg whites and salt together until stiff peaks form. Set aside.

๐ŸŽ„ Sift the almond flour and 1 ยฝ cups of granulated sugar into a bowl.

๐ŸŽ„ Add about โ…“ of the almond flour mixture to the egg whites, and use a spatula to gently fold it in.

๐ŸŽ„ Then, add in the vanilla extract and almond extract, quickly fold them in.

๐ŸŽ„ Add another โ…“ cup of the almond flour mixture to the egg whites and fold it in again.

๐ŸŽ„ Then add the remaining almond flour mixture and fold it in one last time (the cookie dough should be like a thick paste).

๐ŸŽ„ Scoop out mounds of the cookie dough and place them onto a plate with granulated sugar. Roll the scoops of cookie dough in the sugar, then use your hands to roll and round them into balls.

๐ŸŽ„ Drop the balls into a bowl of powdered sugar to completely and evenly coat them.

๐ŸŽ„ย Place on the prepared baking sheet, and use your hand to lightly press each cookie.

๐ŸŽ„ย Bake for 20-25 minutes.

๐ŸŽ„ย Remove and let cool on a wire cooling rack.

๐ŸŽ„ย Then, take half of the cookies, and spread ~1 tsp of the Granola Butterยฎ on them. Then take the remaining cookies, and place them on top of the ones with GB to create cookie sandwichesย ๐Ÿคค๐Ÿคคย Enjoy!
