Apple Cider Bars 🍎🍎 (Gluten-Free, Vegan)
The best make-ahead fall treat for work lunches or after school snacks!
Here's what you'll need:
For the crust:
🍎 2 cups almond flour
🍎 1/4 cup coconut flour
🍎 1/4 cup coconut oil, melted
🍎 3 tbsp maple syrup
🍎 3/4 tsp cinnamon
🍎 Pinch of salt
For the apple layer:
🍎 1/2 cup Apple Cider Donut Granola Butter
🍎 2 tbsp maple syrup
🍎 1/4 tsp cinnamon
🍎 3 cups apples (e.g., honeycrisp), chopped (peel if needed)
🍎 1 tbsp lemon juice
🍎 1 tbsp cornstarch
🍎 1 tsp cinnamon
For the crumble layer:
🍎 1/2 cup almond flour
🍎 1/4 cup rolled oats
🍎 1/4 cup coconut sugar
🍎 1/4 tsp cinnamon
🍎 2 tbsp coconut oil, melted
🍎 Pinch of salt
Here's what you'll do:
🍎 Preheat to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
🍎 In a large bowl, mix together the crust ingredients. Use your hands to shape into a dough, use a splash more coconut oil if needed.
🍎 Press the dough evenly into the pan and bake for about 12 minutes until lightly golden. Let cool slightly before moving on to next step.
🍎 In a small bowl, combine the apple layer ingredients together making sure the Granola Butter is spread out.
🍎 Layer the apple mixture on the pre-baked crust.
🍎 In a small bowl, mix together the crumble layer ingredients. Sprinkle it evenly over the apples.
🍎 Bake for 25-30 minutes, or until apples are tender and the crumble is golden.
🍎 Let it cool completely before slicing into bars/bites.
