Apple Cider Bars ๐ŸŽ๐ŸŽ (Gluten-Free, Vegan)

The best make-ahead fall treat for work lunches or after school snacks!

Here's what you'll need:

For the crust:

๐ŸŽย 2 cups almond flour

๐ŸŽย 1/4 cup coconut flour

๐ŸŽย 1/4 cup coconut oil, melted

๐ŸŽย 3 tbsp maple syrup

๐ŸŽย 3/4 tsp cinnamon

๐ŸŽย Pinch of salt

For the apple layer:

๐ŸŽย 1/2 cup Apple Cider Donut Granola Butter

๐ŸŽย 2 tbsp maple syrup

๐ŸŽย 1/4 tsp cinnamon

๐ŸŽย 3 cups apples (e.g., honeycrisp), chopped (peel if needed)

๐ŸŽย 1 tbsp lemon juice

๐ŸŽย 1 tbsp cornstarch

๐ŸŽย 1 tsp cinnamon

For the crumble layer:

๐ŸŽย 1/2 cup almond flour

๐ŸŽย 1/4 cup rolled oats

๐ŸŽย 1/4 cup coconut sugar

๐ŸŽย 1/4 tsp cinnamon

๐ŸŽย 2 tbsp coconut oil, melted

๐ŸŽย Pinch of salt

Here's what you'll do:

๐ŸŽย Preheat to 350ยฐF (175ยฐC) and line an 8x8-inch baking pan with parchment paper.

๐ŸŽย In a large bowl, mix together the crust ingredients. Use your hands to shape into a dough, use a splash more coconut oil if needed.

๐ŸŽย Press the dough evenly into the pan and bake for about 12 minutes until lightly golden. Let cool slightly before moving on to next step.

๐ŸŽย In a small bowl, combine the apple layer ingredients together making sure the Granola Butter is spread out.

๐ŸŽย Layer the apple mixture on the pre-baked crust.

๐ŸŽย In a small bowl, mix together the crumble layer ingredients. Sprinkle it evenly over the apples.

๐ŸŽย Bake for 25-30 minutes, or until apples are tender and the crumble is golden.

๐ŸŽย Let it cool completely before slicing into bars/bites.
