Apple Cider Bars ๐๐ (Gluten-Free, Vegan)
The best make-ahead fall treat for work lunches or after school snacks!
Here's what you'll need:
For the crust:
๐ย 2 cups almond flour
๐ย 1/4 cup coconut flour
๐ย 1/4 cup coconut oil, melted
๐ย 3 tbsp maple syrup
๐ย 3/4 tsp cinnamon
๐ย Pinch of salt
For the apple layer:
๐ย 1/2 cup Apple Cider Donut Granola Butter
๐ย 2 tbsp maple syrup
๐ย 1/4 tsp cinnamon
๐ย 3 cups apples (e.g., honeycrisp), chopped (peel if needed)
๐ย 1 tbsp lemon juice
๐ย 1 tbsp cornstarch
๐ย 1 tsp cinnamon
For the crumble layer:
๐ย 1/2 cup almond flour
๐ย 1/4 cup rolled oats
๐ย 1/4 cup coconut sugar
๐ย 1/4 tsp cinnamon
๐ย 2 tbsp coconut oil, melted
๐ย Pinch of salt
ย
Here's what you'll do:
๐ย Preheat to 350ยฐF (175ยฐC) and line an 8x8-inch baking pan with parchment paper.
๐ย In a large bowl, mix together the crust ingredients. Use your hands to shape into a dough, use a splash more coconut oil if needed.
๐ย Press the dough evenly into the pan and bake for about 12 minutes until lightly golden. Let cool slightly before moving on to next step.
๐ย In a small bowl, combine the apple layer ingredients together making sure the Granola Butter is spread out.
๐ย Layer the apple mixture on the pre-baked crust.
๐ย In a small bowl, mix together the crumble layer ingredients. Sprinkle it evenly over the apples.
๐ย Bake for 25-30 minutes, or until apples are tender and the crumble is golden.
๐ย Let it cool completely before slicing into bars/bites.
