Apple Cider Blondies
🍎 1 cup gluten-free 1:1 flour blend (with xanthan gum)
🍎 ½ tsp baking powder
🍎 ½ tsp cinnamon
🍎 ¼ tsp nutmeg
🍎 ¼ tsp salt
🍎 ½ cup apple cider (reduced to about ¼ cup)
🍎 ½ cup Apple Cider Granola Butter
🍎 ½ cup coconut sugar
🍎 6 tbsp melted coconut oil
🍎 1 egg, whisked
🍎 1 tsp vanilla extract
🍎 ¼–½ cup white chocolate chips for top garnish
🍎 Preheat oven to 350°F (175°C). Line an 8×8" pan with parchment paper.
🍎 Simmer apple cider in a small saucepan over medium heat until thickened or gets to ¼ cup.
🍎 In a bowl, whisk together egg, coconut sugar, melted coconut oil, granola butter, vanilla, and reduced cider until smooth.
🍎 In a separate bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
🍎 Fold dry ingredients into wet until just combined.
🍎 Spread into the prepared pan, smooth top, and sprinkle with white chocolate chips. Bake 22–24 minutes for fudgy texture (edges golden, center slightly soft).
🍎 Cool completely in the pan before slicing and enjoy!
