Banana Chocolate Chunk Pumpkin Scones (Dairy-Free, Gluten-Free, Refined Sugar-Free)

Here's what you'll need:

✨ 2 overripe bananas

✨ 1 egg, plus 1 egg for egg wash

✨ ⅓ cup almond milk

✨ 1 tsp vanilla extract

✨ ¼ cup coconut sugar

✨ ⅓ cup Pumpkin Spice Granola Butter®

✨ 2 cups almond flour

✨ ¼ cup coconut flour

✨ 6 tbsp cornstarch

✨ 2 tsp baking powder

✨ ½ cup chocolate chunks/chips 


Here's what you'll do:

✨ Preheat oven to 400F. In a bowl, beat together the overripe bananas, egg, almond milk, and vanilla until creamy.

✨ Add the coconut sugar and Pumpkin Spice Granola Butter®, and mix until combined.

✨ Gently mix in the almond flour, coconut flour, cornstarch, and baking powder until combined. Then add the chopped chocolate chunks/chips and fold into the batter.

✨ Transfer the dough to a piece of parchment paper sprinkled with cornstarch. Shape the dough into a flat circle.

✨ Use a sharp knife dusted with flour and cut the circle into 8 triangles.

✨ Brush each scone with egg wash and then transfer the parchment paper to a baking sheet (scones can be left in circular shape touching each other).

✨ Bake for 14-16 minutes until golden brown.

✨ Sprinkle the scones with extra chocolate chunks/chips while still warm. Dip in Pumpkin Spice Granola Butter® for extra yum!
