Banana Cinnamon Roll Waffles (Gluten-Free, Dairy-Free)

Eggo who??? These waffles will have you forgetting the toaster version even exists - they're easy, they're delicious, and they're gluten & dairy-free!!ย 

Here's what you'll need:

๐Ÿง‡ 1 banana

๐Ÿง‡ 2 eggs

๐Ÿง‡ ยพ tsp baking powder

๐Ÿง‡ ยผ cup gluten free all-purpose flour

๐Ÿง‡ ยผ cup Cinnamon Roll Granola Butterยฎ

๐Ÿง‡ Optional toppings: coconut yogurt, powdered sugar, maple syrup

Here's what you'll do:

๐Ÿง‡ In a small bowl, mash the banana. Then, add in the egg and baking powder, and whisk to incorporate.

๐Ÿง‡ Add in the gluten free flour and then whisk until the batter is well combined.

๐Ÿง‡ Preheat your waffle iron. Spoon the Cinnamon Roll Granola Butterยฎ into a small ziploc bag and cut one of the corners off to allow to pipe.

๐Ÿง‡ Using a ยผ cup, scoop the batter into the preheated waffle iron. Then, pipe a โ€˜cinnamon rollโ€™ design on top of the batter with the Cinnamon Roll Granola Butterยฎ. Cook the waffles until golden brown, about 2-3 minutes. Repeat with the remaining batter and GB.

๐Ÿง‡ Plate the waffles, and top with coconut yogurt, powdered sugar, maple syrup and/or any other toppings if desired :)
