Blue Monster Cupcakes (Vegan, Gluten-Free, Nut-Free, School Safe)

Grab your favorite cupcake mix (we love Simple Mills) and make these Blue Monster cupcakes with a ✨homemade buttercream cookie frosting✨!! 💙🧁🥳

Here's what you'll need:

For the frosting:

🧁 2 cups powdered sugar

🧁 1 cup non-dairy butter (one block)

🧁 ¼ cup Blue Monster Granola Butter

🧁 1 tsp vanilla extract

🧁 2-3 tbsp non-dairy milk

For the cupcakes:

🧁 1 package of your fave cupcake mix! We used Simple Mills :)

 

Here's what you'll do:

🧁 Let your butter sit at room temperature until soft to touch.

🧁 Add butter to a bowl and use a stand mixer or handheld mixer to beat until butter is smooth.

🧁 Add in the powdered sugar, Granola Butter, and vanilla extract. Mix on low speed to prevent sugar from spilling, then increase the speed to medium until the mixture is fluffy.

🧁 Gradually pour in the milk, starting off with 2 tablespoons and adding more as needed to reach your desired consistency,

🧁 Continue mixing until the frosting is smooth and creamy. If the frosting is too thick, add a little more non-dairy milk, a teaspoon at a time. If the frosting is too runny, add more powdered sugar, ¼ cup at a time. Adjust this as needed to your preference.

🧁 You can now spread the frosting over the cupcakes and top each with a mini cookie and enjoy!

🧁 Store in the fridge for up for 4 days!


*Due to the cookie chunks in the granola butter, it is best to spread this on the cupcakes using a spoon vs a pipe as the pipe will get clogged with the cookie chunks and not come out smoothly*
