Blueberry Banana Bread Biscuits ๐Ÿซ๐ŸŒ (Nut-Free, Low Sugar)

The biscuits that will help you live out your Great British Baking Show dreamsย ๐Ÿฅฐ They're flaky, fruity, the perfect amount of sweet & surprisingly easy!ย 

Here's what you'll need:

๐Ÿซ 1 cup all-purpose flour

๐Ÿซ 2 cups cake flour (or 1 ยพ cups all-purpose flour + ยผ cup cornstarch whisked together)

๐Ÿซ 1 tbsp baking powder

๐Ÿซ ยฝ tsp baking soda

๐Ÿซ 2 tbsp granulated sugar

๐Ÿซ 1 ยฝ tsp salt

๐Ÿซ 12 tbsp butter, cold and cut into cubes

๐Ÿซ 1 โ…“ cups buttermilk

๐Ÿซ 1 cup blueberries, fresh or frozen

๐Ÿซ โ…“ cup Banana Bread Granola Butterยฎ

Here's what you'll do:

๐Ÿซ Preheat oven to 425F. Lightly grease a 10โ€ cast iron skillet or round baking pan; set aside.

๐Ÿซ In a large bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, sugar, and salt.

๐Ÿซ Add in the cubed butter, and use a pastry cutter or two knives to mix until the mixtureย is crumbly with pea-size chunks.

๐Ÿซ Pour in the buttermilk and mix with a fork until combined, be careful not to overmix! The dough should be soft enough to scoop.

๐Ÿซ Gently fold in the blueberries.

๐Ÿซ Use a ยฝ cup to scoop the dough and place in the prepared skillet or pan.

๐Ÿซ Top each biscuit with ~1 tsp of the Banana Breadย Granola Butterยฎ and spread.

๐Ÿซ Bake for 20-22 minutes, or until golden brown.

๐Ÿซ Remove and serve warm with butter, honey & moreย Banana Breadย Granola Butterยฎ if desired!
