Cinnamon Roll Banana Cake (Nut-Free)

Here's what you'll need:

๐ŸŒ 3 cups all-purpose flour

๐ŸŒ 1 cup granulated sugar

๐ŸŒ 4 tsp baking powder

๐ŸŒ 1 ยผ cup milk

๐ŸŒ 1 tsp vanilla extract

๐ŸŒ 2 eggs, at room temperature

๐ŸŒ 1 stick butter, melted and slightly cooled

๐ŸŒ 3 large ripe bananas, mashed

๐ŸŒ ยผ cup sugar + 3 tsp cinnamon, for topping

For the cinnamon roll swirl:

๐ŸŒ ยฝ cup Cinnamon Roll Granola Butterยฎ

For the maple glaze:

๐ŸŒ ยฝ cup powdered sugar

๐ŸŒ 2 tbsp maple syrup

๐ŸŒ ยฝ tbsp milk

๐ŸŒ 1 tsp vanilla extract

Here's what you'll do:

๐ŸŒ Preheat oven to 350F. Line an 8x8โ€ baking pan with parchment paper; set aside.

๐ŸŒ In a large bowl, whisk together the flour, sugar, and baking powder. Set aside.

๐ŸŒ In a medium separate bowl, whisk together the milk, vanilla extract, eggs, and butter until well combined. Add in the mashed banana and mix to combine.

๐ŸŒ Add the wet ingredients to the dry, and use a wooden spoon to mix until combined.

๐ŸŒ Pour the batter into the prepared baking pan. Then, dollop the Cinnamon Rollย Granola Butterยฎย on top and use a knife to gently swirl around. Sprinkle the cinnamon sugar mixture all over the top.

๐ŸŒ Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the middle comes out clean.

๐ŸŒ While the cake is baking, make the maple glaze. Whisk together the ingredients for the maple glaze in a small bowl.

๐ŸŒ Remove from the oven, let cool for 10 minutes and then drizzle the glaze over top.
