COCONUT BERRY ICE CREAM🍦🥥🫐🍫 (Gluten-Free, Dairy-Free)

What is better than homemade?! Especially homemade *Granola Butter* ice cream!!!! 🥵🍦 Plus, it's gluten-free & dairy-free‼️

Here's what you'll need:

🍦 1 cup raw and soaked cashews (soaked in hot water for at least 30 minutes, best if left overnight)

🍦 ½ cup pitted medjool dates (about 5-6)

🍦 ⅓ cup Wild Berry Granola Butter

🍦 ¾ canned coconut milk (add more or less to consistency)

🍦 2 tbsp coconut flakes (or more)

🍦 Handful of fresh or frozen blueberries


Here's what you'll do:

🍦 Drain your soaked cashews and add to a food processor. Add in the pitted dates, Granola Butter and half of the coconut milk.

🍦 Start to blend and gradually add in the rest of the milk. Adjust the quantity of the milk if needed.

🍦 Continue to blend until the consistency is smooth and creamy.

🍦 Transfer to a a freezer-safe loaf pan and mix in the coconut flakes and blueberries.

🍦 Freeze for at least 4 hours or until firm.

🍦 Once frozen and ready to enjoy, remove from freezer and let it sit out for 5-10 minutes to soften lightly.
