Cookies and Cream Cheesecake Cups

Cookies & Cream Cheesecake Cups served with a strawberry

Cheesecake Filling:

πŸͺ 1 cup cottage cheese

πŸͺ 1/2 cup plain Greek yogurt

πŸͺ ΒΌ-β…“ cup maple syrup (add more if prefer sweeter, taste and adjust)

πŸͺ 1 tsp vanilla extract

πŸͺ β…“ cup Cookies & Cream Granola Butter

Crust:

πŸͺ 1 tbsp Cookies & Cream Granola Butter

πŸͺ 3/4 cup Cookies & Cream Granola (crushed)

Instructions:Β 

πŸͺ In a blender or food processor, combine cottage cheese, Greek yogurt, maple syrup, vanilla extract, and cookies & cream granola butter. Blend until smooth and creamy.

πŸͺ In a blender, pulse the crushed Cookies & Cream Granola with Granola Butter until a crumbly mixture forms.

πŸͺ Assemble jars by adding a tablespoon or two of the crust mixture to the bottom, then 1/4 cup of the cheesecake filling.

πŸͺ Top with more of the granola mixture, chocolate, or fruit

πŸͺ Enjoy immediately or chill for a firmer texture!
