Cookies & Cream Banana Bread

Ingredients

🍌 1 1/2 cups gluten-free flour

🍌 1 tsp baking soda

🍌 1/2 tsp baking powder

🍌 1/4 salt

🍌 3 ripe bananas, mashed

🍌 1/3 cup Cookies n Cream Granola Butter

🍌 1/4 cup melted coconut oil

🍌 1/3 cup coconut sugar

🍌 2 eggs

🍌 1/3 cup Cookies n Cream Granola + more for garnish

Directions

🍌 Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

🍌 In a medium bowl, whisk together the gluten-free flour, baking soda, baking powder, and salt. Set aside. In a large mixing bowl, mash the bananas until smooth. Stir in the Cookies n' Cream Granola Butter, melted coconut oil, coconut sugar, and eggs until fully combined.

🍌 Gradually add the dry ingredients into the wet mixture, stirring until just combined. Do not overmix.

🍌 Gently fold in the Cookies n' Cream Granola for a nice crunch throughout the bread. Transfer the batter into the prepared loaf pan, spreading it out evenly.

🍌 Bake in the preheated oven for 45–50 minutes, or until a toothpick inserted into the center comes out clean.

🍌 Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before cutting into slices.
