Cookies & Cream Mini Waffles

Stop what you’re doing and make these COOKIES & CREAM MINI WAFFLES...

Cookies & Cream Waffles Covered in Granola Butter

Ingredients:

🧇 1 cup gluten-free flour (or 1:1 regular flour)

🧇 1 tsp baking powder

🧇 1 tbsp coconut sugar 

🧇 2-3 tbsp unflavored protein powder (add more if you’d like, but add more liquid)

🧇 1 cup milk 

🧇 1 large egg 

🧇 1/4 cup coconut oil

🧇 2 tbsp Cookies n’ Cream Granola Butter

🧇 ~1/4 cup~ Cookies n’ Cream Granola 

Top with:

🧇 More granola/whipped cream/melted chocolate

 

Instructions: 

🧇 Preheat the mini waffle maker and lightly grease with cooking spray or butter.

🧇 In a medium bowl, whisk together the flour, baking powder, and sugar.

🧇 In a separate bowl, mix the milk, egg, oil, and Cookies n’ Cream Granola Butter until smooth.

🧇 Gradually pour the wet ingredients into the dry ingredients and mix until combined. The batter should be slightly thick.

🧇 Add in the crushed cookies n’ cream granola.

🧇 Spoon small amounts of batter into the waffle maker, spreading evenly. Cook for about 5 minutes, or until golden. Repeat process for remaining batter.

🧇 Top the waffles with a drizzle of cookies n’ cream granola butter, extra crushed granola, whipped cream, and/or chocolate syrup.
