Deep Dish Cinnamon Roll Granola Butter® Oatmeal Cookie (Gluten-Free, Dairy-Free, Nut-Free)

Say Deep Dish Cinnamon Roll Granola Butter® Oatmeal Cookie 3x fast!!!! This baby is ooey, gooey, melt-in-your-mouth deliciousness 😛

Here's what you'll need:

🤎 1 ½ cups gluten free rolled oats

🤎 1 ½ cups gluten free all-purpose four

🤎 ½ tsp baking soda

🤎 1 tsp cinnamon

🤎 ¼ tsp salt

🤎 ½ cup vegan butter, at room temperature

🤎 ½ cup Cinnamon Roll Granola Butter®

🤎 ½ cup sugar

🤎 ½ cup brown sugar or coconut sugar

🤎 1 egg

🤎 ½ tsp vanilla extract

🤎 Extra Cinnamon Roll Granola Butter® for topping

🤎 Vanilla ice cream, for serving


Here's what you'll do:

🤎 Preheat oven to 350F. Grease a small skillet or baking dish with nonstick cooking spray; set aside.

🤎 In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.

🤎 In a separate large bowl, beat together the butter, Cinnamon Roll Granola Butter®, sugar, and brown sugar until smooth and creamy. Then, add in the egg and vanilla extract, and continue to beat until smooth.

🤎 Add in the dry ingredients, and mix until well combined.

🤎 Press the dough into the prepared skillet or baking dish. Bake for 30-35 minutes, or until golden around the edges, but still soft in the center.

🤎 Remove from the oven and top with extra Cinnamon Roll Granola Butter® if desired.

🤎 Cut, and serve warm with a scoop of vanilla ice cream. Bonus points if you top your ice cream with more GB for some magic shell vibes :)
