Double Chocolate Fudge Brownie Bites (Nut-Free, Vegan Option, Gluten-Free Option)

These brownie bites are chocolate heaven - made even better with our limited run of Chocolate Birthday Cake Granola Butterโ„ข! Make them for your next summer picnic, your kiddo's birthday party, or just for a treat yoself moment ๐Ÿ˜‡

Here's what you'll need:

๐ŸŽ‚ 3 eggs (could sub flax egg)

๐ŸŽ‚ โ…” cup granulated sugar

๐ŸŽ‚ 10 ยฝ tbsp butter (could sub vegan butter)

๐ŸŽ‚ ยฝ cup chocolate chips of choice

๐ŸŽ‚ 1 tsp vanilla extract

๐ŸŽ‚ ยฝ cup flour (could sub GF flour)

๐ŸŽ‚ โ…“ cup unsweetened cocoa powder

๐ŸŽ‚ ยผ cup chocolate chips, for mixing in

๐ŸŽ‚ ยผ cup Chocolate Birthday Cake Granola Butterโ„ข

๐ŸŽ‚ ยพ cup chocolate chips (for chocolate coating)

๐ŸŽ‚ 1 ยฝ tbsp coconut oil

๐ŸŽ‚ Optional rainbow sprinkles, for toppingย 


Here's what you'll do:

๐ŸŽ‚ Preheat oven to 350F. Grease or line a 8x8โ€ baking pan; set aside.

๐ŸŽ‚ In a small microwave-safe bowl, melt together the chocolate chips and butter in the microwave at 20-second intervals.

๐ŸŽ‚ In a separate medium bowl, whisk together the eggs, vanilla extract, and sugar until well combined.

๐ŸŽ‚ Add in the melted chocolate mixture and whisk until combined.

๐ŸŽ‚ Then, add in the cocoa powder and flour, and use a wooden spoon to mix until smooth.

๐ŸŽ‚ Fold in the chocolate chips & top with the Chocolate Birthday Cake Granola Butterโ„ข.

๐ŸŽ‚ Bake at 350F for 18-22 minutes.

๐ŸŽ‚ Once done, remove from the oven and let cool in the pan for 15 minutes. Once the pan is slightly cooled off, move the pan to the freezer, and allow to sit for 15-20 minutes to set, until the brownies are able to be cut without being too gooey.

๐ŸŽ‚ In a medium microwave-safe bowl, melt the chocolate and coconut oil together for the chocolate coating at 30-second intervals, stirring in between each.

๐ŸŽ‚ Once the brownie is set, cut into 20-25 bite-sized brownie bites. Line a large baking sheet with parchment paper.

๐ŸŽ‚ Dip each brownie bite in the chocolate to completely cover all sides, and place on the prepared baking sheet with parchment paper. Sprinkle the tops with rainbow sprinkles if desired.

๐ŸŽ‚ Place back into the freezer for at least 15 minutes to allow the chocolate to harden.

๐ŸŽ‚ Store in an airtight container in the fridge (if you don't inhale them all immediately)!
