Dubai Cookies on a Sheet Pan

Small batch, makes 6 GF DF cookies

Ingredients

๐Ÿ’š 1 cup almond flour

๐Ÿ’š 1 cup gluten-free all-purpose (white) flour blend

๐Ÿ’š ยฝ tsp baking soda

๐Ÿ’š ยพ tsp baking powder

๐Ÿ’š Pinch of salt

๐Ÿ’š 4 tbsp coconut oil or butter, softened (not melted)

๐Ÿ’š ยผ cup milk (dairy-free if needed)

๐Ÿ’š โ…“ cup sugar (coconut or brown sugar works best)

๐Ÿ’š 1 egg

๐Ÿ’š 1 tsp vanilla extract

๐Ÿ’š โ…“โ€“ยฝ cup chocolate chunks

๐Ÿ’š 6 tbsp Dubai Chocolate Granola Butter (1 tbsp each, frozen)

Instructions

๐Ÿ’š Scoop 6 balls of granola butter (1 tbsp each) on a lined baking sheet and freeze for 15โ€“20 minutes.

๐Ÿ’š In a medium bowl, cream together softened coconut oil/butter and sugar.

๐Ÿ’š Mix in the egg and vanilla.

๐Ÿ’š Add almond flour, GF flour, baking soda, baking powder, and salt. Mix until combined.

๐Ÿ’š Stir in the milk gradually until the dough holds together, then chill in the freezer for about 20 minutes.

๐Ÿ’š Divide dough into 6 equal portions. Flatten, place a frozen granola butter ball in the center, and seal well.

๐Ÿ’š Press chocolate chunks on top of each cookie.

๐Ÿ’š Preheat the oven to 350ยฐF. Bake for 12โ€“14 minutes, until the tops are set and edges are lightly golden.

Cool on the tray for 7โ€“8 minutes before transferring.
