Gluten Free Sweet Potato Brownies
Meet the Granola Butter version of the VIRAL SWEET POTATO BROWNIES - AND they're gluten free. 🍠🍫

Ingredients

1 cup mashed sweet potato ( smooth)

1 egg
-
1/3 cup Vanilla Cookie Granola Butter (nut-free, gluten-free and vegan oat spread)

1/4 cup maple syrup or honey

1/4 cup cocoa powder
-
1/4 cup oat flour
-
Pinch of sea salt (plus more for garnish)

1/3 cup chocolate chips
Instructions

Preheat the oven to 350°F. Line a small loaf pan or 8x8 pan with parchment.

Whisk sweet potato, egg, Vanilla Cookie Granola Butter , and maple syrup until super smooth and glossy.

Mix in cocoa powder, oat flour, and salt until thick.

Fold in chocolate chips.

Spread into the pan and bake for 16–18 minutes. The center should still look slightly underdone.

Let cool for at least 20 minutes.
Store at room temperature for the first day and then in the fridge for up to one week
