Granola Butter® Pancakes (Vegan, GF)
These delicious vegan and gluten-free pancakes are the *perfect* breakfast or brunch dish for anyone with dietary restrictions or who wants a healthier alternative to traditional pancakes! The Granola Butter® gives these pancakes a rich & delicious flavor, while the GF flour makes them light & fluffy. Pancake perfection 😇
Here's what you'll need:
🥞 1 1/2 cups gluten-free flour
🥞 2 tablespoons sugar
🥞 2 teaspoons baking powder
🥞 1/2 teaspoon baking soda
🥞 1/2 teaspoon salt
🥞 1 cup almond milk
🥞 1/4 cup Granola Butter® (we used Vanilla but you could use any flavor!)
🥞 1 tablespoon apple cider vinegar
🥞 1 teaspoon vanilla extract
🥞 1 ripe banana, mashed
Here's what you'll do:
🥞 In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.
🥞 In a separate bowl, mix together the almond milk, Granola Butter®, apple cider vinegar, vanilla extract, and mashed banana until well combined.
🥞 Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
🥞 Heat a non-stick pan over medium heat. Scoop 1/4 cup of batter for each pancake into the pan and cook for 2-3 minutes on each side, or until the edges start to look set and the surface is bubbly.
🥞 Repeat with the remaining batter, adding more oil or non-stick spray as needed.
🥞 Serve the pancakes warm, topped with more GB, fresh fruit, or maple syrup. Enjoy!
This recipe makes about 6-8 pancakes, depending on the size of your pancakes. These pancakes are best enjoyed immediately, but you can store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a non-stick pan over medium heat before serving!
