Make This For Thanksgiving: Sticky Pumpkin Pecan Cobbler !!
For all you last-minute Thanksgiving bakers, this one's for youย ๐ฅฐ Introducing: Sticky Pumpkin Pecan Cobbler - the perfect Thanksgiving breakfast, dessert, or cooking fuelย ๐ช๐ผ

Here's what you'll need:
๐งก 1 ยผ cup all purpose flour
๐งก 2 tsp pumpkin pie spice
๐งก 2 tsp baking powder
๐งก ยฝ tsp salt
๐งก ยพ cup granulated sugar
๐งก ยผ butter, melted
๐งก ยฝ cup pumpkin puree
๐งก โ  cup milk of choice
๐งก 2 tsp vanilla extract
For the topping:
๐งก โ  cup Pumpkin Spice Granola Butter
๐งก ยฝ cup chopped pecans
๐งก ยฝ cup granulated sugar
๐งก ยฝ cup brown sugar or coconut sugar
๐งก 1 ยฝ cups hot water
ย
Here's what you'll do:
๐งกย Preheat oven to 350F. Coat an 8โ cast iron skillet or 8โ square baking pan with nonstick cooking spray. Set aside.
๐งกย In a large bowl whisk together the flour, pumpkin pie spice, baking powder, salt, and granulated sugar. Set aside.
๐งกย In a medium bowl, whisk together the melted butter, pumpkin puree, milk, baking powder, salt, and granulated sugar. Then, pour the wet ingredients into the dry ingredient mixture, and stir until well combined. The batter should be thick!
๐งกย Spread the batter into the prepared pan. Then, dollop the Granola Butter on top of the batter, and use a toothpick or knife to swirl around. Set aside.
๐งกย Next, make the topping. In a medium bowl, mix together the granulated sugar and brown or coconut sugar. Stir in the pecans to combine.
๐งกย Sprinkle this mixture on top of the cake batter.
๐งกย Immediately pour the hot water onto the topping and DO! NOT! STIR!
๐งกย Place the pan on a baking sheet and bake for 50-60 minutes, until the center is set (although there will be a sauce formed underneath the cake from the water and sugar combining).
๐งกย Allow to cool for 15 minutes. Then, sprinkle with powdered sugar and/or ice cream and whipped cream if desired. INHALE!
