Mini Banana Carrot Cake!

...oh did we mention?? cream cheese filling AND icing?? 🤤 

What you'll need! 

  • 1 egg
  • ½ cup greek yogurt
  • 2 ripe bananas, mashed
  • ⅓ cup maple syrup or honey
  • 1 tsp vanilla extract
  • ¾ cup quick oats
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 1 cup grated carrots (excess moisture wrung out)
  • Optional: ½ cup chopped pecans or walnuts
  • ¼ cup @oat.haus Vanilla Granola Butter, for filling

Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ½ cup butter, at room temperature
  • 1 tsp vanilla extract 
  • 1 ½ cups powdered sugar

What to do!

  1. Preheat oven to 350F. Grease a mini loaf pan with nonstick cooking spray OR you can alternatively grease and line a standard 9x5” loaf pan.
  2. In a large bowl, whisk together the egg, greek yogurt, mashed bananas, maple syrup or honey, and vanilla until smooth.
  3. Then, stir in the oats, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. Spoon the flour in and fold it into the batter until just combined. 
  5. Add in the grated carrots and chopped pecans or walnuts (if using), and fold to combine, being careful not to overmix. Set aside.
  6. To make the cream cheese filling, beat together the softened cream cheese and butter. Then, add in the vanilla extract and powdered sugar, and continue to beat until fully combined and fluffy.
  7. If you are making mini loaves, use a ¼ cup to scoop the batter into the bottom of each loaf section. Place and spread ~1 tsp of granola butter in the middle of each. Then, place ~1 tbsp of the cream cheese filling on top of the granola butter. Scoop another ¼ cup of the batter on top of the fillings (the loaf wells should be ~¾ of the way full) and spread to ensure the batter is completely covering the filling.
  8. If using a standard loaf pan, pour half of the batter into the prepared loaf pan. Spread the granola butter in the middle, and top with ~½ cup of the cream cheese filling. Then, pour the remaining batter on top of the filling, ensuring that that filling is completely covered.
  9. For mini loaves, bake for 30-32 minutes.
  10. For a standard loaf pan, bake for 30 minutes, then cover with foil and bake for another 10-15 minutes, or until a toothpick inserted in the middle comes out clean.
  11. Let cool in the loaf pan for 10 minutes, then remove and transfer to a wire cooling rack.
  12. Once cooled, spread the remaining cream cheese filling on top as frosting.
