No-bake โSamoaโ Cookies
A 'Samoa' Cookie ~granola butter~ remix.

Ingredients
๐ช 1 cup toasted shredded coconut (toast at 350 for 5-10 minutes or until it starts to brown)
๐ช A little over 1/3 cup Vanilla Oat Haus Granola Butter
๐ช 2/3 cup pitted and soaked Medjool dates (softened in warm water for 10 min, then drained)
๐ช 1 tsp vanilla extract
๐ช Pinch of saltย
๐ช 1 cup dark chocolate chips and splash of coconut oil (melted)
Instructions
๐ช Blend the soaked dates, vanilla extract, and sea salt until smooth. Add to a bowl and stir in the toasted coconut and granola butter until fully combined.
๐ช Scoop and press the mixture into small cookie rounds on a parchment-lined tray. Dig a hole in the middle using a straw.
๐ช Place in the freeze for 15-20 minutes or until they harden. Drizzle with dark chocolate and enjoy!
