OAT BERRY CUPS 🫐🫶🏻🍓 (Gluten-Free, Vegan)

The cute little treat you need to add to your summer dessert rotation 😚

Here's what you'll need:

🍓 1 1/2 cups rolled oats

🍓 1/3 cup Wild Berry Granola Butter

🍓 3 tbsp maple syrup or other liquid sweetener 

🍓 3 tbsp coconut oil 

🍓 1/4 cup almond milk

🍓 Pinch of salt

For filling:

🍓 Mix yogurt (dairy or dairy-free) with dragonfruit powder 

🍓 Top with crushed freeze-dried strawberries 

 

Here's what you'll do:

🍓 Preheat your oven to 350 f.

🍓 Combine all ingredients in a bowl and mix.

🍓 Evenly place the mixture in a muffin pan. Each hole should be filled halfway until you run out.

🍓 Bake for 25 minutes or until it starts to look golden brown.

🍓 Once ready, remove from the oven and immediately take a spoon and indent the middle of each cup. Let it cool for 10 minutes in the pan and after 10 minutes, gently remove (use silverware to assist with lifting up if needed) the cups and place on a wire rack to cool.

🍓 Mix yogurt with dragon fruit powder and place a spoonful of the yogurt in each cup. Top with crushed freeze-dried strawberries.

🍓 Store in the fridge for up to 5 days!
