Oatmeal GB Date Cups (Nut-Free, School Safe, Vegan, Gluten-Free)

These Oatmeal Date Cups are like the sophisticated older sis of the classic PB cups you know & love 🤎 While the taste is on par with your favorite chocolate treats, these are packed with dates, oats & all ingredients you can feel good about serving your kiddos (& yourself!!) 🥰

Here's what you'll need:

🤎 ⅔ cup Easy Stir Vanilla Granola Butter™ (you can also sub good ol regular Vanilla GB, as well!)

🤎 ½ cup dates, softened and mashed

🤎 2 tbsp maple syrup

🤎 ¾ cup old fashioned rolled oats

🤎 1 cup dark chocolate chips

🤎 1 tbsp coconut oil

🤎 Flaky sea salt, for topping

 

Here's what you'll do:

🤎 Line a 12-cup muffin tin with liners, set aside.

🤎 In a bowl, mix together the GB, dates, and maple syrup. Then, add in the oats and mix until well combined.

🤎 Add the mixture to each muffin well in the prepared muffin pan (~2 tbsp per well). Then, press the mixture down with the back of a spoon.

🤎 Place in the freezer and freeze for at least 20 minutes. While in the freezer, melt the dark chocolate chips with the coconut oil at 30-second intervals in the microwave, stirring well in between each.

🤎 When ready, add the melted chocolate on the tops of each oat cup and freeze for at least 20 more minutes. Remove, sprinkle with flaky sea salt, and enjoy!

🤎 Store in the fridge in an airtight container for up to a week (if they last that long hehe) 😇
