Slightly stale bread works best! In a shallow bowl, whisk the eggs and add pumpkin, milk, vanilla, cinnamon, pumpkin pie spice, and salt and whisk again until completely smooth. Add the bread cubes and quickly toss to coat; donโt let them sit and soak. Lift them up and let any excess custard drip off. Heat a skillet over medium to medium-low heat and lightly grease with butter or avocado oil.
