Pumpkin Spice Mousse Overnight Oats (Gluten-Free, Vegan, Refined Sugar-Free)

Fall oat bowl szn is upon us!!!! And you're gonna want to add this recipe to your list :)

Here's what you'll need:

🧡 ½ cup oat flour

🧡 ½ cup almond milk

🧡 2 tbsp pumpkin puree

🧡 2-3 tsp maple syrup

🧡 ½ tsp cinnamon

🧡 ¼ tsp pumpkin pie spice

🧡 ½ tsp vanilla extract

🧡 Pinch of salt

🧡 ⅓ cup greek yogurt (for the pumpkin spice topping)

🧡 1-2 tbsp Pumpkin Spice Granola Butter® (for the pumpkin spice topping)

🧡 Optional: liquid stevia drops (for the pumpkin spice topping)

 

Here's what you'll do:

🧡 In a medium bowl, mix together all of the ingredients for the base.

🧡 Place in a ramekin or mason jar.

🧡 Then, mix together the greek yogurt, Pumpkin Spice Granola Butter®, and sweetener if using.

🧡 Dollop the topping on top of the base.

🧡 Place in the fridge for at least 30 minutes or overnight.

🧡 Sprinkle extra pumpkin pie spice on top if desired! Would also be delish topped with banana, choc chips, more GB, or granola :)
