Pumpkin Spice Mousse Overnight Oats (Gluten-Free, Vegan, Refined Sugar-Free)

Fall oat bowl szn is upon us!!!! And you're gonna want to add this recipe to your list :)

Here's what you'll need:

๐Ÿงก ยฝ cup oat flour

๐Ÿงก ยฝ cup almond milk

๐Ÿงก 2 tbsp pumpkin puree

๐Ÿงก 2-3 tsp maple syrup

๐Ÿงก ยฝ tsp cinnamon

๐Ÿงก ยผ tsp pumpkin pie spice

๐Ÿงก ยฝ tsp vanilla extract

๐Ÿงก Pinch of salt

๐Ÿงกย โ…“ cup greek yogurt (for the pumpkin spice topping)

๐Ÿงกย 1-2 tbsp Pumpkin Spice Granola Butterยฎย (for the pumpkin spice topping)

๐Ÿงกย Optional: liquid stevia dropsย (for the pumpkin spice topping)

Here's what you'll do:

๐Ÿงกย In a medium bowl, mix together all of the ingredients for the base.

๐Ÿงกย Place in a ramekin or mason jar.

๐Ÿงกย Then, mix together the greek yogurt,ย Pumpkin Spice Granola Butterยฎ, and sweetener if using.

๐Ÿงกย Dollop the topping on top of the base.

๐Ÿงกย Place in the fridge for at least 30 minutes or overnight.

๐Ÿงกย Sprinkle extra pumpkin pie spice on top if desired! Would also be delish topped with banana, choc chips, more GB, or granola :)
