Pumpkin Spice Mousse Overnight Oats (Gluten-Free, Vegan, Refined Sugar-Free)
Fall oat bowl szn is upon us!!!! And you're gonna want to add this recipe to your list :)
Here's what you'll need:
๐งก ยฝ cup oat flour
๐งก ยฝ cup almond milk
๐งก 2 tbsp pumpkin puree
๐งก 2-3 tsp maple syrup
๐งก ยฝ tsp cinnamon
๐งก ยผ tsp pumpkin pie spice
๐งก ยฝ tsp vanilla extract
๐งก Pinch of salt
๐งกย โ cup greek yogurt (for the pumpkin spice topping)
๐งกย 1-2 tbsp Pumpkin Spice Granola Butterยฎย (for the pumpkin spice topping)
๐งกย Optional: liquid stevia dropsย (for the pumpkin spice topping)

Here's what you'll do:
๐งกย In a medium bowl, mix together all of the ingredients for the base.
๐งกย Place in a ramekin or mason jar.
๐งกย Then, mix together the greek yogurt,ย Pumpkin Spice Granola Butterยฎ, and sweetener if using.
๐งกย Dollop the topping on top of the base.
๐งกย Place in the fridge for at least 30 minutes or overnight.
๐งกย Sprinkle extra pumpkin pie spice on top if desired! Would also be delish topped with banana, choc chips, more GB, or granola :)
