Red Velvet Banana Bread Cookies (Gluten Free, Dairy Free, Nut Free)

An ode to our two most favorite recent GB flavors - Banana Bread (rip) & Red Velvet!! Make em now and thank us later :)

Here's what you'll need:

❤️ 1 ripe banana, mashed

❤️ ½ cup melted vegan butter

❤️ ¾ cup brown sugar

❤️ 1 egg yolk

❤️ 1 tsp vanilla extract

❤️ 1 ⅓ cups gluten free all-purpose flour

❤️ ½ tsp baking soda

❤️ 2 tbsp ground cinnamon

❤️ ½ tsp salt

❤️ ⅔ cup dairy free chocolate chips

❤️ 3 tbsp Red Velvet Granola Butter


Here's what you'll do:

🍌 In a large bowl, combine the melted butter, brown sugar, and mashed banana. Whisk to combine.

🍌 Add in the egg yolk and vanilla extract, and whisk well to incorporate.

🍌 Add in the four, salt, baking soda, and cinnamon. Stir with a wooden spoon until fully combined.

🍌 Fold in the chocolate chips. Then, dollop the Granola Butter® on top, and use a spoon or knife to gently swirl the GB around in the batter, being careful not to mix in.

🍌 Set aside and preheat the oven to 350F.

🍌 Line a baking sheet with parchment paper. Once the oven is preheated, use a mini cookie scoop to scoop out small dough balls.

🍌 Place on the baking sheet (2” apart), and bake for 10-12 minutes or until the edges are set and the cookies puffed up.

🍌 Let cool on the pan for 5 minutes, then transfer to a wire cooling rack. Enjoy!
