Red Velvet Banana Bread Cookies (Gluten Free, Dairy Free, Nut Free)

An ode to our two most favorite recent GB flavors - Banana Bread (rip) & Red Velvet!! Make em now and thank us later :)

Here's what you'll need:

โค๏ธ 1 ripe banana, mashed

โค๏ธ ยฝ cup melted vegan butter

โค๏ธ ยพ cup brown sugar

โค๏ธ 1 egg yolk

โค๏ธ 1 tsp vanilla extract

โค๏ธ 1 โ…“ cups gluten free all-purpose flour

โค๏ธ ยฝ tsp baking soda

โค๏ธ 2 tbsp ground cinnamon

โค๏ธ ยฝ tsp salt

โค๏ธ โ…” cup dairy free chocolate chips

โค๏ธ 3 tbsp Red Velvet Granola Butter

Here's what you'll do:

๐ŸŒ In a large bowl, combine the melted butter, brown sugar, and mashed banana. Whisk to combine.

๐ŸŒ Add in the egg yolk and vanilla extract, and whisk well to incorporate.

๐ŸŒ Add in the four, salt, baking soda, and cinnamon. Stir with a wooden spoon until fully combined.

๐ŸŒ Fold in the chocolate chips. Then, dollop the Granola Butterยฎ on top, and use a spoon or knife to gently swirl the GB around in the batter, being careful not to mix in.

๐ŸŒ Set aside and preheat the oven to 350F.

๐ŸŒ Line a baking sheet with parchment paper. Once the oven is preheated, use a mini cookie scoop to scoop out small dough balls.

๐ŸŒ Place on the baking sheet (2โ€ apart), and bake for 10-12 minutes or until the edges are set and the cookies puffed up.

๐ŸŒ Let cool on the pan for 5 minutes, then transfer to a wire cooling rack. Enjoy!
