RED VELVET IS BACK 💃
Red Velvet is back, baby!!! We worked our magic and secured enough ingredients for a limited drop #2 & she's officially here. To celebrate, we'll be inhaling these Red Velvet Cake Truffles until further notice ✌🏼
Here's what you'll need:
🌹 2 cups all-purpose flour
🌹 3 tbsp cocoa powder
🌹 1 tsp baking soda
🌹 ½ tsp baking powder
🌹 ½ tsp salt
🌹 ½ cup butter, melted
🌹 ½ cup granulated sugar
🌹 ½ cup brown sugar
🌹 1 egg
🌹 2 tsp vanilla extract
🌹 2 tsp red food coloring
🌹 ½ cup buttermilk
🌹 8oz cream cheese, softened
🌹 ¼ cup Red Velvet Granola Butter®
🌹 1 cup dark chocolate chips + 1 tbsp coconut oil, for drizzling
Here's what you'll do:
🌹 Preheat the oven to 350F. Line an 8x8” baking pan with parchment paper; set aside.
🌹 In a bowl, whisk the flour, cocoa powder, baking soda, baking powder, and salt together until combined.
🌹 In a separate large mixing bowl, add the butter, sugar, and brown sugar, and whisk until well combined.
🌹 Add in the egg and vanilla extract and continue to mix until smooth.
🌹 Add in the red food coloring and half of the flour mixture. Mix until combined.
🌹 Pour in the buttermilk and continue to mix until smooth. Add in the remaining flour and mix until fully incorporated.
🌹 Pour the batter into the prepared baking pan, and bake for 20-25 minutes. Allow to cool completely after removing.
🌹 Once the cake is cooled, crumble it into a bowl. Add in the cream cheese and Granola Butter®, and mix until combined (you may need to use your hands to make sure there are no large chunks).
🌹 Use a mini cookie scoop to scoop out the mixture (~1.5 tbsp each) and roll into balls. Place the balls on a baking sheet lined with parchment paper, and refrigerate for at least 2 hours.
🌹 Once the cake truffles are set, melt the chocolate chips and coconut oil together in a bowl at 30-second intervals in the microwave.
🌹 Drizzle the chocolate on top of the cake truffles, and then place back in the refrigerator for at least 15 minutes to allow the chocolate to harden completely (if u can wait that long). Enjoy!
