RED VELVET IS BACK ๐Ÿ’ƒ

Red Velvet is back, baby!!! We worked our magic and secured enough ingredients for a limited drop #2 & she's officially here. To celebrate, we'll be inhaling these Red Velvet Cake Truffles until further noticeย โœŒ๐Ÿผ

Here's what you'll need:

๐ŸŒน 2 cups all-purpose flour

๐ŸŒน 3 tbsp cocoa powder

๐ŸŒน 1 tsp baking soda

๐ŸŒน ยฝ tsp baking powder

๐ŸŒน ยฝ tsp salt

๐ŸŒน ยฝ cup butter, melted

๐ŸŒน ยฝ cup granulated sugar

๐ŸŒน ยฝ cup brown sugar

๐ŸŒน 1 egg

๐ŸŒน 2 tsp vanilla extract

๐ŸŒน 2 tsp red food coloring

๐ŸŒน ยฝ cup buttermilk

๐ŸŒน 8oz cream cheese, softened

๐ŸŒน ยผ cup Red Velvet Granola Butter

๐ŸŒน 1 cup dark chocolate chips + 1 tbsp coconut oil, for drizzling

Here's what you'll do:

๐ŸŒน Preheat the oven to 350F. Line an 8x8โ€ baking pan with parchment paper; set aside.

๐ŸŒน In a bowl, whisk the flour, cocoa powder, baking soda, baking powder, and salt together until combined.

๐ŸŒน In a separate large mixing bowl, add the butter, sugar, and brown sugar, and whisk until well combined.

๐ŸŒน Add in the egg and vanilla extract and continue to mix until smooth.

๐ŸŒน Add in the red food coloring and half of the flour mixture. Mix until combined.

๐ŸŒน Pour in the buttermilk and continue to mix until smooth. Add in the remaining flour and mix until fully incorporated.

๐ŸŒน Pour the batter into the prepared baking pan, and bake for 20-25 minutes. Allow to cool completely after removing.

๐ŸŒน Once the cake is cooled, crumble it into a bowl. Add in the cream cheese and Granola Butter, and mix until combined (you may need to use your hands to make sure there are no large chunks).

๐ŸŒน Use a mini cookie scoop to scoop out the mixture (~1.5 tbsp each) and roll into balls. Place the balls on a baking sheet lined with parchment paper, and refrigerate for at least 2 hours.

๐ŸŒน Once the cake truffles are set, melt the chocolate chips and coconut oil together in a bowl at 30-second intervals in the microwave.

๐ŸŒน Drizzle the chocolate on top of the cake truffles, and then place back in the refrigerator for at least 15 minutes to allow the chocolate to harden completely (if u can wait that long). Enjoy!
