Protein Rocky Road Fudge

This (protein-filled) Rocky Road Fudge will actually be the best no-bake dessert you’ve made in a long time. ☺️ 

Ingredients

  • 1 cup mini marshmallows
  • 1 cup dark chocolate chips
  • ¼ cup unflavored protein powder
  • 2 tsp coconut oil
  • ½ cup Oat Haus Cinnamon Graham Granola Butter
  • ½ cup raw walnuts, finely chopped
  • Splash of vanilla extract
  • Pinch of salt

Instructions 

  1. Add chocolate chips, coconut oil, and Granola Butter to a bowl and melt in the microwave for 20ish seconds. Stir to combine.

  2. Add in the rest of the ingredients to the melted mixture and stir. Adjust to taste and consistency and feel free to add in more protein, granola, etc.

  3. Line a loaf pan with parchment paper and pour in the fudge. Sprinkle some more chopped walnuts and drizzle granola butter on top.

  4. Place in the freezer for about 1 hour or until it is fully frozen.

  5. Once frozen, cut into cubes and enjoy!

*Store in the fridge up to 5 days and freezer up to 2 months*
