Single Serve Apple Crisp (Gluten-Free, Vegan, Nut-Free)

 

Yes, we're already in fall recipe mode ok?!?! This baby makes 2 servings so you don’t have to share with your partner or child ​​🤪🤌🏻 & you don’t need to pre-cook the apples!

Here's what you'll need:

 

For the apple mixture:

🍎 1 large honeycrisp apple, or 2 smaller ones

🍎 2 tbsp coconut flour

🍎 2 tsp pumpkin pie spice

🍎 2 tbsp maple syrup

For the crisp:

🍎 2-3 tbsp Vanilla Granola Butter

🍎 3 tbsp coconut flour

🍎 2/4 cup GF oats

🍎 2 tbsp coconut oil

🍎 2 tsp pumpkin pie spice

🍎 Pinch of salt

 

Here's what you'll do:

🍎 Preheat your oven to 350F.

🍎 In a small bowl, combine all of the apple mixture ingredients together.

🍎 Distribute evenly in 2 small ramekins and set to the side.

🍎 To make the crisp, add everything to the same small bowl (no extra dishes here), and mix until well combined.

🍎 Top the apple mixture with the crisp evenly.

🍎 Place the ramekins on a baking sheet and bake for about 20 minutes.

🍎 Remove from the oven and top with your favorite ice cream or whip cream and enjoy!
