Strawberry Shortcake Protein Balls (High Protein, Nut-Free, School Safe, Gluten-Free)
If a truffle & a chocolate covered strawberry had a baby, it would be these 😍 They're so decadent & tasty, but they pack a big protein punch and would make the perfect pre-workout or school snack!
Here's what you'll need:
🍰 1 cup quick cooking oats
🍰 ⅓ cup coconut flour
🍰 2 scoops vanilla protein powder of choice
🍰 ½ cup Easy Stir Vanilla Granola Butter™ (regular Vanilla or even Strawberry Shortcake would be great, too!)
🍰 1 ½ cups freeze-dried strawberries, crushed
🍰 ½ cup greek yogurt
🍰 2-4 tbsp almond milk
For the chocolate drizzle:
🍰 1 cup dark chocolate chips
🍰 1 tbsp coconut oil
Here's what you'll do:
🍰 Line a baking sheet with parchment paper; set aside.
🍰 In a large bowl, mix together all of the ingredients.
🍰 Use a spoon to portion out the protein balls (~1-2 tbsp each depending on size preference).
🍰 Use your hands to roll into a ball shape, and then place on the prepared baking sheet.
🍰 In a medium microwave-safe bowl, melt together the chocolate chips and coconut oil at 30-second intervals, stirring in between each until fully melted.
🍰 Then, drizzle the chocolate over the protein balls. Place in the fridge until the chocolate is hardened.
🍰 Store in an airtight container in the fridge for up to a week!
