Strawberry Shortcake Protein Balls (High Protein, Nut-Free, School Safe, Gluten-Free)

If a truffle & a chocolate covered strawberry had a baby, it would be theseย ๐Ÿ˜ They're so decadent & tasty, but they pack a big protein punch and would make the perfect pre-workout or school snack!

Here's what you'll need:

๐Ÿฐ 1 cup quick cooking oats

๐Ÿฐ โ…“ cup coconut flour

๐Ÿฐ 2 scoops vanilla protein powder of choice

๐Ÿฐ ยฝ cup Easy Stir Vanilla Granola Butterโ„ข (regular Vanilla or even Strawberry Shortcake would be great, too!)

๐Ÿฐ 1 ยฝ cups freeze-dried strawberries, crushed

๐Ÿฐ ยฝ cup greek yogurt

๐Ÿฐ 2-4 tbsp almond milk

For the chocolate drizzle:

๐Ÿฐ 1 cup dark chocolate chips

๐Ÿฐ 1 tbsp coconut oil

Here's what you'll do:

๐Ÿฐ Line a baking sheet with parchment paper; set aside.

๐Ÿฐ In a large bowl, mix together all of the ingredients.

๐Ÿฐ Use a spoon to portion out the protein balls (~1-2 tbsp each depending on size preference).

๐Ÿฐ Use your hands to roll into a ball shape, and then place on the prepared baking sheet.

๐Ÿฐ In a medium microwave-safe bowl, melt together the chocolate chips and coconut oil at 30-second intervals, stirring in between each until fully melted.

๐Ÿฐ Then, drizzle the chocolate over the protein balls. Place in the fridge until the chocolate is hardened.

๐Ÿฐ Store in an airtight container in the fridge for up to a week!
