Strawberry Shortcake Protein Balls (High Protein, Nut-Free, School Safe, Gluten-Free)
If a truffle & a chocolate covered strawberry had a baby, it would be theseย ๐ They're so decadent & tasty, but they pack a big protein punch and would make the perfect pre-workout or school snack!
Here's what you'll need:
๐ฐ 1 cup quick cooking oats
๐ฐ โ cup coconut flour
๐ฐ 2 scoops vanilla protein powder of choice
๐ฐ ยฝ cup Easy Stir Vanilla Granola Butterโข (regular Vanilla or even Strawberry Shortcake would be great, too!)
๐ฐ 1 ยฝ cups freeze-dried strawberries, crushed
๐ฐ ยฝ cup greek yogurt
๐ฐ 2-4 tbsp almond milk
For the chocolate drizzle:
๐ฐ 1 cup dark chocolate chips
๐ฐ 1 tbsp coconut oil

Here's what you'll do:
๐ฐ Line a baking sheet with parchment paper; set aside.
๐ฐ In a large bowl, mix together all of the ingredients.
๐ฐ Use a spoon to portion out the protein balls (~1-2 tbsp each depending on size preference).
๐ฐ Use your hands to roll into a ball shape, and then place on the prepared baking sheet.
๐ฐ In a medium microwave-safe bowl, melt together the chocolate chips and coconut oil at 30-second intervals, stirring in between each until fully melted.
๐ฐ Then, drizzle the chocolate over the protein balls. Place in the fridge until the chocolate is hardened.
๐ฐ Store in an airtight container in the fridge for up to a week!
