Stuffed Baked Apples
Stuffed apples for the summer? With a little vanilla ice cream - why not?!

Ingredients
- 2 large apples
- 2-3 tbsp Apple Cider Donut Granola Butter or Cinnamon Graham Granola Butter
- 1/4 cup oats
- 2 tbsp chopped pecans or walnuts
- 1 tbsp maple syrup
- 1 tsp cinnamon
- 1 tbsp melted coconut oil or butter
Instructions
- Preheat your oven to 350°F
- Slice off the top of each apple and scoop out the core and some of the apple flesh, leaving about 1/2 inch of apple at the bottom.
- In a small bowl, mix the Granola Butter, oats, chopped nuts, maple syrup, cinnamon, and melted coconut oil or butter until well combined.
- Spoon the filling into each cored apple, packing it tightly and slightly mounding it on top.
- Place the stuffed apples in a baking dish, and add a splash of water to the bottom of the dish to prevent sticking. Cover with foil and bake for 25ish minutes, or until the apples are tender but not mushy. *Remove the foil the last 10 minutes of baking*
- Enjoy warm with vanilla ice cream!
