Stuffed Baked Apples

Stuffed apples for the summer? With a little vanilla ice cream - why not?! 

Ingredients

  • 2 large apples 
  • 2-3 tbsp Apple Cider Donut Granola Butter or Cinnamon Graham Granola Butter
  • 1/4 cup oats
  • 2 tbsp chopped pecans or walnuts
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 tbsp melted coconut oil or butter

Instructions

  1. Preheat your oven to 350°F 
  2. Slice off the top of each apple and scoop out the core and some of the apple flesh, leaving about 1/2 inch of apple at the bottom.
  3. In a small bowl, mix the Granola Butter, oats, chopped nuts, maple syrup, cinnamon, and melted coconut oil or butter until well combined.
  4. Spoon the filling into each cored apple, packing it tightly and slightly mounding it on top.
  5. Place the stuffed apples in a baking dish, and add a splash of water to the bottom of the dish to prevent sticking. Cover with foil and bake for 25ish minutes, or until the apples are tender but not mushy. *Remove the foil the last 10 minutes of baking*
  6. Enjoy warm with vanilla ice cream!
