Stuffed Pumpkin Spice Churro French Toast Bites (Dairy-Free, Nut-Free)

Here's what you'll need:
๐งก Challah bread, cut into bite sized pieces
๐งก 3 eggs
๐งก 2-3 tbsp milk of choice (we used oat)
๐งก 1 tsp vanilla extract
๐งก 1 tsp pumpkin pie spice or cinnamon
๐งก ยผ cup Pumpkin Spice Granola Butterยฎ
๐งก 3 tbsp sugar + 3 tsp cinnamon

Here's what you'll do:
๐งก In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and pumpkin pie spice or cinnamon.
๐งก Take the bite-sized pieces of the challah bread and make a slit in each cube down the middle.
๐งก Spread about 1 tsp of the Pumpkin Spice Granola Butterยฎ in the pocket/in the middle of the cubed bread.
๐งก Heat a skillet over medium high heat, and spread butter or ghee on the pan to lightly grease it.
๐งก Dunk the stuffed challah bread pieces into the egg mixture, and place the bread bites onto the pan.
๐งก Cook on each side until golden. Repeat until all of the bread is gone.
๐งก Combine the cinnamon and sugar in a bowl, and immediately coat the bread bites.
๐งก Serve with maple syrup or extraย Pumpkin Spice Granola Butterยฎ for dipping!
