Stuffed Pumpkin Spice Churro French Toast Bites (Dairy-Free, Nut-Free)

Everything tastes better in single bite formย ๐Ÿ˜‹ And these Stuffed Pumpkin Spice Churro French Toast Bites are no exception! Would make the PERFECT Thanksgiving morning breakfastย ๐Ÿ˜

Here's what you'll need:

๐Ÿงก Challah bread, cut into bite sized pieces

๐Ÿงก 3 eggs

๐Ÿงก 2-3 tbsp milk of choice (we used oat)

๐Ÿงก 1 tsp vanilla extract

๐Ÿงก 1 tsp pumpkin pie spice or cinnamon

๐Ÿงก ยผ cup Pumpkin Spice Granola Butterยฎ

๐Ÿงก 3 tbsp sugar + 3 tsp cinnamon

Here's what you'll do:

๐Ÿงก In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and pumpkin pie spice or cinnamon.

๐Ÿงก Take the bite-sized pieces of the challah bread and make a slit in each cube down the middle.

๐Ÿงก Spread about 1 tsp of the Pumpkin Spice Granola Butterยฎ in the pocket/in the middle of the cubed bread.

๐Ÿงก Heat a skillet over medium high heat, and spread butter or ghee on the pan to lightly grease it.

๐Ÿงก Dunk the stuffed challah bread pieces into the egg mixture, and place the bread bites onto the pan.

๐Ÿงก Cook on each side until golden. Repeat until all of the bread is gone.

๐Ÿงก Combine the cinnamon and sugar in a bowl, and immediately coat the bread bites.

๐Ÿงก Serve with maple syrup or extraย Pumpkin Spice Granola Butterยฎ for dipping!
