This treat 🍪🍓🍕 is the perfect mix of soft, chewy, and fruity. It makes for a fun and easy dessert that’s perfect for your upcoming brunches and other social events!

For the Crust:
🍓 8 sugar cookies, room temperature (use more if want a bigger pizza base)
For the “sauce”:
🍓 ¼ cup unsweetened coconut or regular yogurt
🍓 1 container (8 oz) vegan or regular cream cheese, softened
🍓 1 teaspoon vanilla extract
🍓 ⅓ cup Vanilla Granola Butter
For Topping:
🍓 Assortment of fresh fruit
🍓 Brownie Batter Granola
Instructions:
🍓 Preheat your oven to 350°F (175°C).
🍓 Arrange the sugar cookies on a parchment-lined baking sheet, pressing them together to form one large circle.
🍓 Bake for 15-20 minutes or until the edges start to lightly brown.
🍓 Let it cool completely before adding toppings. In a blender or food processor, combine coconut yogurt, vegan cream cheese, vanilla extract, and vanilla granola butter.
🍓 Blend until smooth and creamy.
🍓 Spread the creamy mixture evenly over the cooled sugar cookie crust.
🍓 Add your fresh fruit and sprinkle with Brownie Batter Granola Butter.
🍓 Slice and serve immediately. The crust will soften after a couple of hours but will still taste delicious! Store any leftovers in the fridge for up to 2 days.
