VANILLA-STUFFED MATCHA COOKIES

Vanilla Stuffed Matcha Cookies with White Chocolate Chips on a Cooling Rack

Ingredients:

🍡 1/2 cup vanilla granola butter (plus a few extra tablespoons if stuffing the cookies)

🍡 1 stick butter, softened

🍡 3/4 cup brown sugar, packed

🍡 2 eggs 

🍡 1½ tsp vanilla extract

🍡 2 tbsp almond milk

🍡 2¼ cups gluten-free 1:1 flour

🍡 2 tbsp matcha powder

🍡 3/4 tsp baking powder

🍡 1/4 tsp baking soda

🍡 1/2 tsp salt

🍡 About 1 ½ cups white chocolate chips

Instructions:

🍡 In a large bowl or standing mixer, beat vanilla granola butter, butter, and sugar until fluffy (about 2–3 mins).

🍡 Mix in the eggs and vanilla extract until smooth.

🍡 In a separate bowl, whisk together the flour, matcha, baking powder, baking soda, and salt.

🍡 Gradually stir the dry mixture into the wet until just combined. Fold in the white chocolate chips and add milk here if needed.

🍡 Scoop large balls and place on a parchment-lined baking sheet. (use a large cookie scoop and combine two scoops together)

🍡 Optional step but a MUST.. stuff a couple of the cookies with granola butter

🍡 Bake at 350Β°F for 10–12 minutes, or until edges are just set and centers look soft.Β 

🍡 Let cool on the sheet for 5–10 minutes before transferring to a wire rack.
