Vanilla-Stuffed Matcha Cookies
VANILLA-STUFFED MATCHA COOKIES

Ingredients:
π΅ 1/2 cup vanilla granola butter (plus a few extra tablespoons if stuffing the cookies)
π΅ 1 stick butter, softened
π΅ 3/4 cup brown sugar, packed
π΅ 2 eggsΒ
π΅ 1Β½ tsp vanilla extract
π΅ 2 tbsp almond milk
π΅ 2ΒΌ cups gluten-free 1:1 flour
π΅ 2 tbsp matcha powder
π΅ 3/4 tsp baking powder
π΅ 1/4 tsp baking soda
π΅ 1/2 tsp salt
π΅ About 1 Β½ cups white chocolate chips
Instructions:
π΅ In a large bowl or standing mixer, beat vanilla granola butter, butter, and sugar until fluffy (about 2β3 mins).
π΅ Mix in the eggs and vanilla extract until smooth.
π΅ In a separate bowl, whisk together the flour, matcha, baking powder, baking soda, and salt.
π΅ Gradually stir the dry mixture into the wet until just combined. Fold in the white chocolate chips and add milk here if needed.
π΅ Scoop large balls and place on a parchment-lined baking sheet. (use a large cookie scoop and combine two scoops together)
π΅ Optional step but a MUST.. stuff a couple of the cookies with granola butter
π΅ Bake at 350Β°F for 10β12 minutes, or until edges are just set and centers look soft.Β
π΅ Let cool on the sheet for 5β10 minutes before transferring to a wire rack.
