VANILLA-STUFFED MATCHA COOKIES

Matcha cookies stuffed with nut-free, Vanilla Cookie Granola Butter goodness. 😋

Vanilla Stuffed Matcha Cookies with White Chocolate Chips on a Cooling Rack

Ingredients:

🍵 1/2 cup Vanilla Cookie Granola Butter (plus a few extra tablespoons if stuffing the cookies)

🍵 1 stick butter, softened

🍵 3/4 cup brown sugar, packed

🍵 2 eggs 

🍵 1½ tsp vanilla extract

🍵 2 tbsp almond milk

🍵 2¼ cups gluten-free 1:1 flour

🍵 2 tbsp matcha powder

🍵 3/4 tsp baking powder

🍵 1/4 tsp baking soda

🍵 1/2 tsp salt

🍵 About 1 ½ cups white chocolate chips

Instructions:

🍵 In a large bowl or standing mixer, beat Vanilla Cookie Granola Butter, butter, and sugar until fluffy (about 2–3 mins).

🍵 Mix in the eggs and vanilla extract until smooth.

🍵 In a separate bowl, whisk together the flour, matcha, baking powder, baking soda, and salt.

🍵 Gradually stir the dry mixture into the wet until just combined. Fold in the white chocolate chips and add milk here if needed.

🍵 Scoop large balls and place on a parchment-lined baking sheet. (use a large cookie scoop and combine two scoops together)

🍵 Optional step but a MUST.. stuff a couple of the cookies with Vanilla Cookie Granola Butter

🍵 Bake at 350°F for 10–12 minutes, or until edges are just set and centers look soft. 

🍵 Let cool on the sheet for 5–10 minutes before transferring to a wire rack.
